Do you need to keep the bonito flakes bag in the refrigerator?

Doesn't need refrigeration (at least over a reasonable amount of time) but an airtight bag or container is recommended. The flakes tend to absorb airborne moisture and will start to lose their crispness and odor.

Do these contain salt? if so, how much per serving?

Package is 100 gr (3.52 oz). Recommended serving is 5 gr (it's about a small plate - good for my two cats treat) and it contains 25 mg of sodium (salt)., i.e. either 0.5%, or 0.5 gram for the whole package (o.5 gram is 0.016 oz) No added salt - just what fish naturally contains. Compare it to some human canned food, you'll be quite shocked

Any reason why I can't use these to make dashi?

No there is no reason these bonito flakes are for people.

Does this product come from China?

No, it comes from Japan. Good question though. I also will not buy products from China for my animals (5) and avoid them as much as I can for my human family as well
