Q: are these opposite the colors that come with the red/blue console? (meaning you'll have a set of blue and a set of red if you have both)

Yes, the neon set is opposite of the neon console. Console is blue L and red R whereas the neon Joy-Con set is red L and blue R. So you'll have a complete set of both colors if you have the neon console and Joy-Con set.
