Q: Is this gallon actually a plastic jug? I thought Tabasco was only bottled in glass in the gallon size?

Mine came in a plastic jug. I just transferred the sauce over to a glass jug I had previously obtained from Avery Island. The sauce is still good though.

Q: What is the shelf life/expiration date?

I bought my 2nd jug in Apr 2021. The expiration was Dec 2021. I stored it in a cabinet and this time it behaved differently than the first jug. The color lightened somewhat and the contents separated. Shaking it re-combined it, but it still tended to separate. The flavor wasn't changed. I kept the first jug in the refrigerator. That one developed clumps that I had to strain out in order to pour into re-used bottles. It also separated but the color did not change. After shaking it stayed combined. I don't recall the expiration date on the first jug. In hindsight, I will refrigerate the next jug and blend the amounts I want to re-bottle.
