the only flour to use if making pie crusts.
I use this flour only for pie crust and keep it in the freezer. It makes a light crispy pie crust that no other flour can do. Several generations in my family has only used White Lily flour for pie crust. It is readily available in the South, but I no longer live there but in the Pacific NW.

Perfect Replacement for Bob’s Red Mill Pastry Flour!
Since Bob’s Red Mill discontinued their pastry flour, I was on the hunt for a good substitute. I discovered that White Lily All-Purpose Flour has a protein content of around 9%, which means it has lower gluten than most other all-purpose flours. I gave it a try, and it worked perfectly! The texture came out just what I was looking for.
