The cost of real vanilla is crazy high now, even the beans are $3 each, so this vanillin is a great supplement to real vanilla. I think it's too strong to use by itself, and lacks some of the complexity real vanilla beans impart to your food but the aroma and flavor addition really helps the desserts. Be cautious though, this is super concentrated vanillin compared to a vanilla bean, so a very small amount (1/4 tsp for 1 liter of creme, for example) goes a long way.
