The difference is bloom strength or firmness of gelatin. It runs from 125-250 bloom. The most popular are silver (around 160 bloom) and gold (around 220 bloom). Hope this helps.

As long as you seal them properly they can last months. I had found a bag that had 3 packs of them, never opened and it had been more than six months. I used them and they work just as if I had purchased yesterday.

The last recipe I had called for 2 sheets. I would use this 2-4 depending on how stiff you need your mousse
