Great Eggs! Two Thumbs Up!
I was pleasantly surprised. After following the instructions to prepare the mixture for cooking, I was very pleased with the outcome of the eggs. They were fluffy, moist, and very tasty, just as if they were fresh from the shells... duh! after all, it IS eggs, just in a powdered form!Anyway, I usually don't like stuff that has been dehydrated, but I'll have to give this one two thumbs-up!

Definitely not like fresh eggs
You know when you make fresh scrambled eggs and you start to get a thin layer of egg up the side of the pan? And then that thin layer of egg starts to brown and emits a burning, eggy smell? That's what this smells like and tastes like. I'm personally not a fan of that smell or taste.I'm giving this, technically, 3.5 stars because of the taste and texture (but because of the nature of this product, I doubt much can be done about it). The texture is off, maybe too soft? It's not rubbery or bouncy like fresh eggs, and it's got a powdery-like mouth feel. However, after reading the comments I did do a 1-1 ratio of powder and water, so next time I'm going to add a little more water to see if that helps.I do recommend mixing your portion first and letting it sit while while you heat up your pan. It starts off a brownish-yellow color, but it froths up and brightens a little bit after sitting a few minutes. It cooks up fine in the pan; it's a little different from fresh eggs as it doesn't quite fluff up or stick together as well. It would do really well for omelets or even egg wraps.I cooked these up as a trial run for my camping trip. Eating them with some buttered toast made them more palatable. I'm glad I'll be eating them in a wrap when I'm camping, lol. On their own, they're kinda gross. Will I buy this again? I don't know, but they serve their purpose as a lightweight and shelf stable egg substitute.

Much better than expected!
I’ll admit that didn’t have high expectations for these, but they really turned out to be pretty great! An great protein to go with my grain free backpacking cereal!

Pretty good alternative to real eggs
The texture and flavor were ok. They were very easy to make and super convenient for hiking.

good for camping and for emergencies
We put this individual two-serving amounts of these dried eggs into baggies for camping trips. Mixed into a rice or pasta packet, it provides high-quality protein in a convenient, non-perishable form. I also keep an unopened package in my basement "disaster pantry" along with freeze-dried and canned goods. I don't expect it to be delicious or to make up part of a gourmet "glamping" meal. It's just good protein that's easy to have on hand at all times.
