Literally French for "rust," Rouille is a fiery-flavored, rust-colored sauce of sunflower oil, milk, spices, egg yolks, mustard, lemon juice, and natural thickeners. It's served as a garnish with fish and fish stews such as bouillabaise. Rouille can also be used as a dipping sauce for roasted chicken or crab cakes.
