Superb ideas and excellent photography
While there are a number of excellent recipes. In this volume, its greatest value lies in its treatment of the subject of food - its selection, preparation , storage, etc. it is a book that is truly enjoyable to read and I have learned much about food in various cultures. The book deals with philosophy of food and the entire environment around food. At the end of the book, there is a chapter that covers the table setting, treatment of guests, etc. Quite eye-opening.

A French Cooking School In A Book!
I had the good fortune to dine at Paul Bocuse's flagship restaurant in Lyon France several times and came away with a heightened appreciation for food as an art form each time. This book is both encyclopedic in the breadth of topics covered and thoroughly illustrated. It's a great addition to any kitchen's bookshelf.

Serious home chefs with resources
Incredible cookbook that mainly teaches technique. From how to clarify butter to how to filet a fish, this book shows all with easy to follow images and text. Many of these techniques are highly advanced while others are simple. I haven't tested all the techniques and recipes but have already found errors and downfalls to the instructions. The fresh pasta recipe is flawed; it gives simple instructions and tells how much flour to use by weight and how many eggs to use. But eggs vary in size, is the recipe for XL eggs or regular eggs? What do you do if the dough isn't the right consistancy? How can you even tell if the dough is the right consistancy? You'll have to use prior knowledge or look it up. Another warning about this cookbook: The recipes are complicated. You need ample cooking resources and high quality materials to accurately follow the recipes. I don't think this book is worth it if you don't have the high quality cooking supplies needed to recreate recipes that are truly works of art. If you have the resources and you are serious about stepping up your French cooking skills, then this book can be very helpful.

this book was beyond my expectations. So much information so many pictures and yet so simple to use and follow. Whether you are a beginner or someone advanced. You absolutely need this book. If I could give it 10 stars, I would.

Great book for references.
Love the fact it's visual pictures so you can compare consistencies. Very detailed and covers basic recipes to more complex ones. Good staple for the kitchen if you are trying to expand knowledge.
