Q: Will it work for a japanese knife (Miyabi)? What are the angles of sharpening?

Q: Yes, which slot is coarse and which is fine ?? I and II means nothing to me.

Q: OK, I don't have super-expensive knives. Do you think I'll get any benefit from using this on them?

We have what I would consider to be "mid-range" knives, good quality but not super expensive (about $80 for the set of 5 and we have had them for years). The Henckels Twin works well with them. I have sharp knives and no complaints.

Q: Every sharpener must be cleaned periodically. How do you clean this one?

I LOVE this sharpener! I clean it periodically with soap & water, then use a q-tip with a small amount of oil.
