Impressive Value
I have purchased a few of Mercer's knives. I have waited years to post a review. They are the best value you will ever find. The stainless steel hits the mark for not rusting, yet holds an edge. I few reviews mentioned rust. I have left mine wet many times. Never any rust. It would take being wet, in an extended wet damp environment to get these to rust. That's abuse, not the products fault. The handle has not degraded any. They are always washed in a dishwasher.

EXCEPTIONAL VALUE FOR A QUALITY KNIFE
PRO - My first MERCER knife, it’s the best cutlery value out there. I’ve owned all of the famous and very expensive German brands. For a fraction of the price of the German knives, this MERCER really delivers. It arrives sharp, and it responds well to a few strokes on a good steel. Excellent textured grip keeps the handle from slipping when wet.CON - This is almost insignificant, but the area where the handle meets the blade isn’t a perfect fit.

Fantastic Knife!
Bought several of the Mercer Genesis series as a gift, and am SUPER impressed with them!A chef told me about Mercer knives, and their high quality offerings. I have used Wusthof knives for many years, and really like them, however they are really expensive. Mercer seems to have similar steel characteristics, and I love the feel and grip of their Genesis series handles!As with many companies, Mercer makes various quality knives, and some of their lower end stuff I was not particularly impressed with (cheap handles, and non-German steel).The fantastic German steel of the Mercer "Genesis" series gets my highest rating. Very sharp, holds and edge well.The knives are made in Taiwan, out of high grade German cutlery steel (and tooling techniques), which brings the price WAY down, but maintains an absolutely fantastic knife. The quality is impeccable.They come with a limited lifetime warranty.I highly recommend Mercer "Genesis" series knives. Super high quality German steel, fantastic handles, and look amazing - all at a very reasonable cost.

Great knife in general but too bulky for peeling
If you want a paring knife to peel apples and such, this probably won't be the best choice so that is why I rated it a 4. The shape reminds me more of a mini-chef knife than a parer. For peeling, something slimmer would work better. But, I have a vegie peeler so that doesn't matter to me. The Mercer genesis paring knife is great for quartering apples and other small items. I find the shape to be advantageous. I also concur with the many positive comments I've read about Mercer Genesis knives in general and I don't understand the negatives about blades rusting, chipping, etc. I've had a couple for over a year and they have held up well and even after getting scratched up in a junky manual sharpener there is no rusting. I will also add that anyone who has hand issues such as arthritis or carpel tunnel would find the Mercer Genesis line to be very comfortable. It is light weight and a handle with a comfortable non-slip handle and the knife seems almost 'self-propelled.' Minimum cutting force is needed. The only negative is the fact that the knives do go dull rather quickly but nothing a sharpener or whetstone can't fix.

Quality and price
The media could not be loaded. This knife is SHARP, so be very careful when you use, or clean it. That said, I needed a new paring knife so I started searching for one that was reasonably priced with good quality, and 5 star ratings. This one hit all the marks without the additional price for hyped up advertising like "hand made by traditional Ming dynasty technology." If you need to impress your friends by telling them about the quality of your "hand made Ming dynasty master chef" paring knife, then by all means spend two to three hundred dollars on one. But if you're not into "this is the highest price knife you can buy" get this. You won't be sorry, and you can use the savings to buy some Wagyu steak.
