I used this for reverse spherification of cocktails and mocktails. It takes a little messing around to get the technique down, but then it works startlingly well. People are shocked when the bubbles pop in their mouths. The bubbles last for 2-3 days if you keep them in the liquid.Follow the concentration directions!

Could not get spherefication of balsamic.
I ordered your calcium lactate Gluconate to try making molecular gastronomy balsamic caviar. Shipping was prompt, well packaged and, I thought, reasonably priced. The quantity was a good amount for my purpose.I tried twice to make the balsamic caviar but could not get solid spheres that would hold their shape. Thinking the balsamic might be too acetic, I tried cherry juice. It too, just formed soft blobs that floated on top of the water. I will keep trying. Perhaps I need to add more calcium gluconate to my distilled water. I will keep trying.
