does it matter which side of the bag is facing up (rough or smooth), when you seal the bag?

We recommend putting the bag with the smooth side facing down to the sealing bar.

Does this machine have the accessory option

Yes, It comes with the accessory option to seal jars or zip bags from food saver.

Is the 5200 the same as the 5480 or the 5380?

Pretty much. The difference between the 5200 and the 5380 is in the number and types of bags that come with the machine. The 5480 has a "pulse" feature, which just slows down the rate at which the vacuum extracts the air out of the bag, useful if you don't want overly crush delicate things I guess. Personally, I've never found it that difficult to hit the "seal" button to stop vacuuming at the right time with normal pump operation.

does it work with ball jar attachment?

Yes, the FM5000 series is compatible with jar sealers and any other FoodSaver accessory and container. Happy shopping!

Food Saver is good brand

I owned a food saver when they first came out and had it for many many years. It finally gave out so I repurchased this model. It is difficult to use. If you are trying to hold the bag into the vacuum then you have to use both hands to press down the bar to get the machine started and that is kind of hard to juggle. There is an area in the back of the machine for the roll but it is hard to grab and feed through to the front to cut and seal. It works once you figure out a way to do it but I am sure other models of the FoodSaver may be easier.

Man I love this thing

We use this constantly. Bought the canisters as well, which are great for keeping produce fresh in the fridge. There's a little bit of a learning curve in creating the bags, but once you have that you're golden.

Team work needed, but perfect!

My grandmother has one, and it works amazing! This is a team effort machine, it's best to have someone help you hold the bags to have them sealed. First time I used it, I would miss the seal, and have to re run it again. We did a lot of food, so being able to make bags for the size needed was perfect! I just added this item to our wedding registry! (Along with extra bags)
