Q: Would a heat mat be effective with this design of vessel in my cold kitchen

I use a heat belt and wrap it around the body of the vessel. A heat mat would be ok but there would be varying temp from bottom to top. The belt provides more even heat. I would definitely recommend more heat. It improves fermentation.

Q: can you remove the plastic to wash to glass jar completely?

I have only removed the lid and the spigot completely to wash. I don't think the plastic comes off. I try not to wash it too much anyway as I think the unit starts to have its own unique micro cultures and if you wash it regularly you might disturb those previous microbes! I think I wash mine every three months or so.

Q: wouldn't it be better if it was not clear, so that you don't have to worry about being in direct sunlight?

I have now bought 4 of these units and the friends I bought them for and I find them great. I don't really know if non clear glass would be better, but I notice that all the demo videos use clear glass and really cannot imagine using anything else.
