Once opened, should it be kept in fridge, or used within so many days?

I keep it in the larder with the soy sauce and vinegar etc. As far as use by... I just keep it until I have used it, never had an issue over the past 20+ years. Not sure what the official line is

Approximately 2 years from date of production. Expect a minimum of 12 months +

Is this product GMO free?

Sorry I do not know. However, considering it is made in Thailand from local produce, I would tend to think not.
