air fry genius
I'm a late comer to the air fry world, sort of. I had one early on and didn't love it, didn't "get" it and felt it took up to much space. However, now that I'm only cooking for two I find the AF to be great and use it a lot. I bought several AF books and am reviewing my favorites, and Air Fry genius is one of those favorites. I am familiar with the author because I have, and use frequently, several of her pressure cooker cookbooks.This cookbook has a good variety of foods, from main dishes to dessert, to both make the best use of the air fryer and to produce delicious food. The recipes are printed in black on white paper and have beautiful pictures of the finished product. The ingredients are listed, then clear directions are given.Some of our favorites, so far, are:cauliflower tater tots. While I'm a big fan of Caulitators, steamed and mashed, and cauliflower crust, this gave me another wonderful way to use cauliflower. The tots held together and weren't over breaded. They are yummy and fun to make and serve.polenta fries with chili lime mayo- just the mayo recipe would have been great but the polenta fries are delicious. You use the packages of prepared polenta so it's even easier.avocado fries- who knew? I didn't even know this was a thing. I love avocados but this brought them to a new levelthai turkey and zucchini meatballs-usually turkey is too dry and zucchini wet, so putting them together? genius. The resulting meatballs are flavorful, juicy, and the thai flavor is fantastic.Hassleback apple crisp (see picture) has quickly become one of our favorite go to Desserts. Super easy, elegant presentation, and you can't believe the delicious result from relatively few ingredients!There are more I've made, everything has turned out, and there are many more I want to make. If you are new to AF, or an old pro, this will be a great book to have.

These recipes are genius
What did I like about this cookbook? For starters I really like that this cookbook has a picture for each recipe. AND I am thrilled to see the nutritional value per serving. So many cookbooks do not include that information, and some of us like to know how many carbs, fats, sodium etc are in a serving. I have many of Meredith's cookbooks, and I have yet to find a recipe I did not like. I'm crazy about air fryers, and her cookbooks are excellent. My only dislike about this book is that the index is horrible. The lettering is so tiny and faint that you can barely read the words. I suppose a magnifying glass would rectify this problem.

Helpful And Tasty!
I'm a big fan of the Blue Jean Chef, I watch her on QVC all the time, she is wonderful and her foods are delicious. I bought her "Air Fry Everything!" book right after I got my amazing Elite Platinum 3.2 Quart Electric Digital Air Fryer Cooker and her book guided me along in my early Air Fryer days.After enjoying the recipes in the "Everything!" book many times, I was thrilled that Meredith was coming out with this new book, "Air Fry Genius". More than a hundred new recipes to excite my taste buds.The back of the new book has a very helpful cooking chart that gives a wonderful guide in preparation of veggies, meats and frozen foods.The book has a great layout for each recipe. A good picture of each tasty treat accompanies all the recipes and the directions are very simple and direct. This book helps me create wonderful food in spite of my limited skills. Meredith knows how to talk to a cook with my limitations and it's Not scary, and it's really FUN.My first new recipe was the Parmesan Asparagus, a favorite veggie around my house, and it's soooo fast and easy! It will be made often, it took 5 minutes!!!Yesterday I prepared the Rib Eye Cheese Steaks with Fried Onions....Amazing! With seven ingredients and five quick and easy preparations it takes about 20 minutes till I was ready to eat and I will want this again and again. Fresh cooked meat and fried onions with melted cheese...What's not to enjoy?!?! and it is so easy too.The Elite Platinum Air Fryer is the most used appliance in the house and I will always have one in the future. I will also always have the Blue Jean Chef's cook books in my collection. Besides the recipes, she teaches how to get the most out of my Air Fryer, using it in ways that will surprise you and make your life better.She will give you knowledge and knowledge is power....and delicious too!
