I like the HEAT and SMOKE level delivered from one teaspoon of this Chipotle adobo spice. The smokiness is very comparable to a good Spanish smoked paprika. It's a mellow heat that stimulates your taste buds, but doesn't make you sweat, and it's easy to digest. It's a great item to kick up the heat a couple of notches, without having to handle Chili's. I find it nearly interchangeable with GochuJang which has more umami than smoke, but a little bit less heat. I use it in seafood or chicken stir Fry's, and add it to Vidalia sweet onion and baby bella mushroom sautes. It's also a great addition to complex pasta sauces to add a little umami heat. Add it to avocado Mayo to make a great Chipotle mayo sandwich spread. A very versatile and TASTY condiment! I wish it was organic, but how much pesticide could one teaspoon contain?

My spouse and I have historically purchased the small cans of La Costena Chipotle in Adobo Sauce for cooking (especially for when we cook pinto beans). As delicious as those tiny cans are, the chipotles are still whole, which creates a giant mess when we chop them ourselves, and sometimes we only need to use a tablespoon or two. I had been searching for a larger container of the Chipotle in Adobo that could be stored in the fridge and reclosed, unlike the small cans. I was excited when I compared the ingredients in the jar of La Costena Diced Chipotle Peppers with the ingredients in the cans of La Constena Chipotle in Adobo Sauce. The ingredients are not exactly the same, but they are pretty close. The taste is not exactly the same (the adobo sauce has a deeper, richer, slightly smokier flavor), but it's pretty close. These larger jars mean we can add chipotle to more dishes without worrying about wasting the rest of the can or creating a big mess all over the cutting board, chopping them ourselves. My preference would be a jar of chopped chipotle in adobo, but I'll keep using the La Costena Diced Chipotle Peppers until then.
