What is the lowest height setting and what is the highest?

Lowest is approx 60cm highest approx100cm my 2 year old grandson can reach it at lowest & his 6' 5 dad has no problem on highest.

I am worried a metal top will grip items less well than wooden ones, especially metal items. Any feedback on that?

I’ve held both metal and wooden items in this bench and not had an issue with either. I suggest you use the plastic clamp pieces that slide in the grooves for metal and just the bench clamp for wooden items. Just remember that to tighten clamp the handles are turned in reverse, I.e. to tighten turn handles anti-clockwise.

Can you clamp a mitre saw to the deck?

I have an evolution 210mm mitre saw and that's exactly what I use it for.

Is this bench stable and rigid enough to use a hand plane on (as opposed to a power sander)? Some benches, especially plastic ones, wobble. Thanks.

If you are referring to within or just over-hanging the top, then yes, If you are asking about long wood lengths then it is just like any other stand, your require more support. The stability - it is very stable, I have glued and screwed the feet on as I found they had a tendency to come off very easily.
