Best Bang for Your Buck Knife Set
This is a great set of Knives for the money. I professionally restore and sharpen knives. This review may seem long winded but for those who want to know more than the fact that they are "razor sharp" since any brand new knife you buy should be very sharp, I'd like to share exactly why I think they are great knives for the money. What makes a good knife is the steel. The steel used in these is 10Cr15CoMoV, which is the Chinese version of the Japanese Steel VG-10 . If Ranking on a 10 scale, 10 being the best: VG-10 and 10Cr15CoMoV rank a 7-8. Its components make for great corrosion resistance, good edge retention, easy to sharpen and maintain. Heat treatment is the other big factor to consider when purchasing a knife, this is measure by what's called the Rockwell Hardness Scale. These knives state that the've been heat treated to a Hardness of 58+ which is the sweet spot for kitchen knives. All reasons why I bought them. Just an FYI - Premium Steels would be M390, MagnaCut and S30V - S90V to name a few.Knives made from premium steels are very expensive ranging from $300 -$500+ for a single knife. Furthermore, Damascus Steel is not a TYPE of steel. Damascus is a STEEL MAKING PROCESS where layers of steel are forged together creating unique design patterns. A knife that says it's made with Damascus Steel does not necessarily make it a good or bad steel.

Time is Money
I LOVE MY NEWLY ACQUIRED KNIFE SET! I have had a basic set for 20 years and I would pick up a highly rated knife for specific needs, but never upgraded until I took a job cooking meals for a family. Making large quantities of food meant more chopping, dicing, peeling, fileting, etc. Time management became extremely important and I knew very quickly that the old set of knives had to go ! I did an enormous amount of research on knife sets and their individual qualities, functionality, esthetics, and grip and I determined which set I was going to invest in. It wasn’t an arm and a leg and it exceeded my expectations.

Great knives
I had initially purchased an 8" chef's knife from this brand but was skeptical about whether it would be of good quality. Boy was I wrong, it was one of the best knives I own. After using it for about 90 days I decided to buy the full knife set and some additional others like a roast slicer, longer bread knife and a set of steak knives of the same brand and set. Love the handles and the weight of these are better than some of my other well known brand culinary knives. Don't hesitate to buy anything from this line.

Great Knives. Confusing support.
The knives are well built and very sharp. I would give them 5 stars however, the locking mechanism that holds the scissors closed for storing in the block was broken into 3 parts upon initial inspection. This type of defect is usually not an issue. It can reported to the manufacturer for replacement. When I attempted to contact the manufacturer, "Hoshanho", I was directed to a link "Visit HOSHANHO support website". That link brings you to directory of relevant searches, "Kitchen Knives", "Chef Knives" and "Chef Knife". I tried all three. They direct you to various knife brands, none of which is the one I need. This is a frustrating time waste.
