Perfect for home canners
This old fashioned plain-Jane litmus paper is easy to use, and reliable. I have a digital pH meter, but it needs calibration and when I'm canning food, I don't want to have to put on my chemist hat. I can just touch a small piece of this paper into my product and BINGO, I know the relative pH. Anyone who home cans would be well advised to have this in the jar kit. Why? Tomatoes. Foods under 4.5 can be water bath canned safely. Foods with pH over 4.5 MUST be pressure canned to be safe. Some new tomato varieties do not meet the 'high acid' test, so should be pressure canned. My juice tested out at 4.0, so I'm safe and confident using conventional water bath canning. Easy peasy!
