Does this use Ceylon cinnamon? I would definitely purchase if it did, I don't want to ingest too much more regular cinnamon.

Hi. It only says organic cinnanom. If you like, you can call Simply Organic, the manufacturer, at 844-550-7100 and ask them what kind of cinnamon it is. Hope you can find out.

Is this like allspice?

Not at all. All spice is one of the ingredients in pumpkin spice. Pumpkin Spice is something more than that. Ground allspice (along with some other spices) is a standard ingredient to make pumpkin spice. If ever you come across any recipe that requires a combination of cinnamon, ginger, nutmeg, allspice, and/or cloves, replace it with equal amounts of this spice blend. If a recipe calls for 1 teaspoon pumpkin spice, you can use ½ teaspoon cinnamon, ¼ teaspoon ginger, and ⅛ teaspoon each nutmeg and allspice. If you want 1 tbsp pumpkin pie spice, use 1 ½ teaspoon cinnamon, ¾ teaspoon ginger, and ¼ teaspoon each nutmeg and allspice. Wherever you use your pumpkin spice, you can be assured that it will smell and taste great enough to make you addicted to it.

Is the cinnamon used Ceylon cinnamon

No. It uses korintje cinnamon which is a product of Indonesia and is cassia cinnamon, not Ceylon. Sorry for adding all of this here, but I accidentally sent my response to another, similar question before I was finished. Unless your intake of cinnamon is rather high —1+-2 tsp of cinnamon daily which could potentially be toxic — there really is no cause for concern. I don't mean food containing 1+tsp, I'm referring to your personal average daily total consumption (note: an entire pumpkin pie contains 1tsp on average). However, if you are being treated with Coumadin/Warfarin for blood clots... then I would stick to Ceylon cinammon if you regularly use cinammon.
