Will I need this for a new Presto 23 qt.?** A: No, at 5,000ft you will be canning at 13 psi on a dial gauge. IF (and that can be a big if) you have a convenient place to get the gauge tested each year (check with your county extension office) then you are better off doing that and using the gauge so that you don't (slightly) overprocess the food by canning at 15 psi (using all 3 pieces) with this weight set. If you do not have a test facility near by, or do not want to watch the dial and adjust the burner as necessary to maintain 13 psi during the entire process, then yes, buy this set. The regulator that comes with the dial-gauge canner is not calibrated as precisely and cannot be relied upon to maintain even 15 psi. This weight set converts the Presto dial gauge canner to a weighted gauge when used in place of the 1-piece regulator, so just remove 1 ring from the weight (use 2 of the 3 pieces) and ignore the gauge.
