My husband's birthday is in prime strawberry season. I bake him a fresh strawberry pie every year using cornstarch for thickening the strawberry goo and it fails half the time, resulting in a pie that is soupy. This INSTANT(i.e. no-cook) Clear Jel fixed that, although I had to use twice as much as the recipe called for. Thankfully, I experimented first with it. There are two kinds of Clear Jel, the kind you have to cook and this kind, which is no cook. One caution - my first experiment was lumpy because I didn't carefully read the instructions, which tell you to combine the Clear Jel with a dry ingredient first (like sugar) and only then to add the liquid. I love this stuff.

I made stabilize whip cream frosting with this and my frosting lasted all week with out melting. Get this and add it to your cream. Follow the directions very clear and you can call manufacture for help. They are lovely

I Love instant cleargel,as a baker I wouldn't be without it. It works wonderfully to stabilize whipped cream and to thicken fruit juices for fillings. My only complaint is that it should come with more helpful instructionsl.

I tried thickening milk with it, the same way you would with Jell-O instant pudding. It did not work.

I used 1/2 tsp Clearjel mixed with a few tablespoons powdered sugar and put the mixture in with 1 cup heavy cream in the mixer. The cream whipped up beautifully and has held up without deflating or weeping, and the taste is the same as regular whipped cream. I have tried flavoring the whipped cream by adding chocolate powder and also coffee powder. Very tasty.I know there are many other uses (Google it) which I will try. But I am thrilled to be able to make whipped cream without it deflating, becoming soggy, or affecting the flavor.Only complaint: I wish the company would give a little guidance on how to use and how much to use. There is only one recipe on the package. Their website also is short on recipe details. But the product is good.

This clear gel is perfect to help stabilize buttercream icings. I don’t have to worry about them melting all over the place.
