No more than a week. Flavor determined by how long it was exposed to air.

Q: Is this pasteurized? My pregnant wife is craving caviar but she can only eat it if it has been pasteurized. Thanks!

Doesn't mater this is roe not caviar. There is a difference. Caviar is from sturgeon species
