Q: Is this wire as flexible (meaning easily bendable but has a little spring back) as other speaker wire

It is very flexible. For lack of a better word, the rubber sheathing is very "supple". I would call it far more flexible than regular speaker wire.

Q: The product description says "Clear PVC jacket with a blue stripe to indicate polarity", but the picture shows a white cover. Which is it?

White, with the two internal leads (red/black) jacketed separately. Exactly what the picture shows.

Q: Can i use this to connect led strip lighting between cabinets??

Depends on the voltage. It's good for low voltage like 3, 6, 9, volts, but not big enough for 120 volts. Low voltage LEDs are supplied power from a driver box, or transformer, that starts with 120 volts and reduces it down to lower voltage. Unless they are battery operated of course.

Q: Will this cable take Latex paint?

Used inside the walls not sure if this is paintable but check on monoprice website
