Great instruction manual!
I finally splurged and got a nice set of knives and the first week I used them my fingers were all sliced up - thought I needed some instruction, and this book caught my eye. I learned a lot from the book about how I'm supposed to be handling my knives to use them properly and safely. All it took was following the instructions and then lots of practice. The book also explains they types of knives and their uses and details the proper way to cut up/slice various meats, fruits and veggies. I found the material extremely helpful and easy to follow. The pictures are very clear and explanatory. I found this book to be a game changer!

Very good instructions
I learned a lot from this book. You could learn a lot of these techniques on a YouTube video, but the level of detail in the book certainly fills in the gaps of any video you could watch. I found the book a worthwhile purchase and it has certainly helped my knife skills. I’m glad I bought it and I continue to practice the techniques from the book. Learning how to use a knife properly for the task at hand makes cooking and the prep work much easier and enjoyable. Not to mention much safer…

Interesting read
I bought this to level up my knife skills but it’s actually been an enjoyable read to just flip through and check out the techniques as well. The writing and photo/documentation is very clear and now I find myself looking for different excuses to try new cuts. Cool book for any foodies out there.

Spirals!
Did not notice it has spirals. When got the book and saw it did notblike it. Kept the book anyway for it has good information. I wish it did not have spirals.

I wish I owned a copy when it was first published!
About a year ago I was house-sitting for a friend-of-a-friend and happened to see this book in their kitchen. I've enjoyed cooking for over 50 years (strictly amateur, believe me) but have had my share of compliments from friends, family, etc. Over the years I've owned a wide range of knives, cookbooks, etc. and have learned a few tricks of the trade:This is more like a 1-on-1 tutorial by a master chef than a mere textbook. The pages on cutting onions is worth the price of admission alone. Btw, if you're ever searching for a gift for anyone who likes to cook, well, look no further than this. Winner, winner chicken dinner!

Useful book with lots of photos
I wasn’t sure what to expect with the description on Amazon but it sounded like it could be handy in the kitchen. Like “how do I sharpen a knife? Or how are you supposed to chop an artichoke?” Does this book have that? Yup! I added some pics so you can actually see it!It’s hard cover and ring bound. A pretty good size book. Overall I’m happy with it. It’ll probably become my go to for how to prep something.
