I lived in Bishop Texas, about 75 miles of the place they make this [San Manuel, Texas]. This is widely known in Texcas as "Guerra's brand" He is a revolutionary who fought alongside Poncho Villa. It has changed recipe over the years, same flavor with better 'fixins'. Try it, half link to 8 scrambled eggs. chorizo without casing in frying pan, warm, add 1/3 cup water to hydrate, add scrambled eggs when frying starts. finish over low heat while scraping bottom of frying pan with spatula to ensure even cooking. I like mine in a flour tortilla. with fried potato and some avocado, perhaps a little ro-tel. everything is optional and possible.

The best chorizo you can get this side of the border
We've had chorizo in Oaxaca, Spain, and the US. Mexican and Spanish chorizo are dofferent in flavor and texture, and frankly, I prefer Mexican chorizo. If you have to buy chorizo in the US, this is as close as you'll get to what we typically have in Oaxaca. Personally, I wish this was spicier, just saying!
