Sharp, Modern and Practical
The Knife is Sharp, Modern and well balanced. It is meant for professional kitchen use, as a sushi chef it's hard finding a left handed yanagi, especially a quality stainless steel one that does not require frequent pampering (slowing down your working speed and eating up youre time), essentially this is a barebones knife that does it's job well meanwhile making you look sexy.BTW: knife arrives relatively sharp, could be sharper when it arrives.

a left handed sushi/sashimi knife!
beautifully designed sushi knife, and a left handed one for me, the leftie. Did you know that sushi knives are left or right handed? Highly recommended, and I recommend all their knives. Worth checking out.

Sharp and easy to keep sharp
Razor sharp, the one sided edge is super easy to maintain, (especially since I only use it to cut down fish). Not heavy whatsoever but perfectly balanced. If you've used a global before you know what the feel of the handle is like. Sharpening is easy and simple being one sided. This is a sashimi knife so it is not meant to cut everything, but rather make paper thin slices out of meats.

professional tool
I love it. It is a quality professional tool. It takes time to master.I do think it could be sharper when you receive it. Otherthan that it cuts precisely and can be used to cut very thinslices.

this lefty loves it
i do actually slice the occassional piece of sushi and sashimi. however i mainly use this at bbq competitions for slicing food for turn in...and to practice cutting meat into rosettes. i have even used it to clean fish. be careful this is the sharpest out of the box global i have ever handled and i have 13 global knives.
