Does the controller turn off the power to the item being controlled if the temperature probe fails? Basically, is it fail safe?

Hi， the controller itself won't power off, but it will power off your heater or cooler means that controller does not have output.

How much heat can the probe cable take (the cable itself)?

The probe can take more than 300C for sure, the cable can work with 250C constantly because it is silicon material, you can use it for 300C like about 1 hour, but we dont recommend you to take so high temperature, but 250C for sure its very security.

How should i run the cable from the probe out of the electric smoker? can i just run it across the door seal? in contact with hot metal.

Its better to cover the cable with heat-resisting materials for protecting the cable from over heat.

What material is the thermal probe wire made of? Does it have a max temperature rating printed or stamped along the side of the probe wire?

The wire is wrapped in a "silicone" material, I believe similar to what's used in hi-temp oven mits and tools. I don't know the specs of this particular material, but given the other applications, It's likely good to over 400 deg Fahrenheit.
