Do I need the jig that holds the stamp or can i stamp without the tool?

You can easily hold the stamp by hand w/o the additional tool.

Does this work well on Sterling Silver as well?

Yes, but for sterling I’ve up graded my stamps

Will these work on keys?

From their website: "Our metal stamps can be used on soft metals such as brass, copper, nickel silver, pewter" Keys are usually made if brass, copper or stainless steel. Copper will stamp easily with a nice hard hit. Stainless steel won't stamp. Brass will stamp with a hard hit, but if you do a few pieces, you will start to ruin your stamps. I would stick with the softer metals such as pewter, aluminum and copper.
