Great item for visualing the knife cuts
Good for practising your knife cuts. Has a separate piece so that as you make your cuts, you can place it on top of this piece to gauge how close you are to the formal cut.

Fantastic!
This product was fantastic! Although not required for my classes, the model set helped me tremendously with my knife cuts! As a visual learner (arent we all?), I found this to be the perfect solution! I read up on the creator of this knife set, Alex Darvishi, and no lie, he is legit! Competitor and International Judge. Thats saying something! I would highly reccomend this to anyone in culinary school or even in high school learning the new cuts! Hope this helps!
