If power is lost, does it remember the temperature setting or does it need to be reset?

This device remember all the settings even in case of accidental power supply is lost. You do not need to reset everything you use it.

What is that output connector? Is that some sort of US / Euro combo socket? Will it accept a USA standard NEMA-15 plug and hold it securely?

Yes. The socket on the controller is compatible with most plugs in the world. It's not a problem to hold US standard NEMA-15 plug securely.

I purchased one of these and did not come with instructions. could someone tell me how to change c- f? i've tried everything. also other codes?

Press SET and UP at the same time and release buttons until CF appears on the screen. Then click set, then click UP or Down to choose C or F.Please note, once advanced setting is changed, all other settings will be reset to default. Please email us service@bayite.com for PDF manual.

can the temperature probe be submerge in liquid? I want to use it for my slow cooker for sous vide cooking...

I use this device to measure the water temperature in my old fashioned ceramic crock slow cooker by filling the crock with water, placing the probe into the water and setting the temperature to on at low setting and off at high setting. I plug the slow cooker into the thermometer, and turn it on high to get to temperature(adding hot water from the sink to shorten this wait time) then low for cooking. It measures the temp of the water very accurately and I've been able to cook vacuum sealed meats in the water to the desired temperature. I have had 3 out of 3 successful cooking events using this method.
