Q: Can I charge wirelessly with this case?

Yes. Have also used the wireless powershare option with the case on to charge some Galaxy buds, worked fine.

Q: How hard is it to push buttons and are they easily distinguishable by touch?

The volume +/- are not textured, really. Since they sit directly above the textures power button, and there is a distinguished groove to separate up from down, I don't feel like there's any issue.

Q: Does it come with a built-in screen protector or should I buy some?

It does not come with a screen protector

Q: Anyone else having trouble with the finger sensor when you put the case on? My phone can't read it with the screen protector part on.

There is a setting in the S21 that allows for greater sensitivity when a screen protector is on. Settings>Display>Touch Sensitivity (about half way down). But like others have said that does not have anything to do with the case. Its whatever the Screen protectors made from or phone settings are.
