Are these wide enough that the tabs would extend past sheet protectors placed behind them in a binder?

Yes, the tabs definitely extend past the sheet protectors I've used in my binder.

How many sheets of paper is each folder able to hold?

The company video states 25 sheets will fit in each folder. I have ordered them and when they come, and are put to use, I will update my answer.

Could these be used with a zipper binder, or would the tabs get in the way?

The binders have 3-hole punch. It's possible to be used with a zipper binder because those binders are bigger than the regular binders. The dimensions are 10" wide with the tab.

Do the pockets have something to keep them closed like a clip, zipper or Velcro? And can I keep like a slim black and white book in the pockets?

No, but they do have a flap that comes from the back side of the pocket, which you can fold over the contents and tuck under the front cover of the pocket. It works quite well, actually. I use these to keep thick, laminated pages in and it does the trick. I’m sure if I shook it hard enough, I could get it to spill out. But assuming you won’t be doing that, it should work just fine.
