Milani Gourmet Caesar Dressing Mix, 12.5-Ounce Units (Pack of 6)

It is ashame that I have to give a 1 star review on this product because it is a good product. Have been buying these packets for the past 6 years from Foothill. Unfortunately, they have halted production of this dressing with no explanation in the customer service emails.It has been a tough time for product production but we are in the business too, it doesn't (or shouldn't) take this long to get your act together. We are working towards a whole year with Foothill suspending production of the Caesar. Stop letting down your customers and get the product in stock. Raise the price if you have to compensate like the rest of the world...we understand.*Update - They did eventually start producing this product but after a few months, they decided to discontinue it. Very disappointing. Companies are so out of touch anymore with their customers and their products. Usually a person with their feet (and often head) buried in the sand making these decisions.

I used this in the mid 80's at a very high end restaurant where I was the Chef. The owners had brought it with them. I mix it exactly as the instructions direct me to: It's already creative & light tasting; unique and full of flavor. Just add water, vinegar & oil. Make it even lighter by increasing water, decreasing oil, eual amounts, but just a bit. Whip it in a bowl with a wire whip to create the emulsion - aka dressing. It enhances basic romaine, as well as can be used as a marinade for chickens. I forgot all about this after I moved from Aspen, as I started a new position in the Foodservice business. Now 30 years later, I have re-started my catering company last month. Did a google search for Milani-- and there she was! It makes over a gallon per pouch & is just as easy to prepare at home as it is in professional kitchens. Catered a party last week and the guests said the dressing was unlike any they have tried before. When your guests compliment you, then you know its a good item.

Dislike - Received a substituted product without my permission (see attached photo). Contains NO Anchovie paste or Thai Fish sauce, which IS included in the classic Caesar Dressing. First item on the ingredients list is Blue Cheese with Parmesan cheese the 14th listed - an insignificant amount. Deducted 1 star for unauthorized substitution and 1 star for ingredient list. No recipe for home use quantity prepared - recipe for 1 gal. preparation is useless.Like - With added Thai Fish sauce and finally shredded (micro planed) Parmesan/Romano cheese, it has excellent flavor, though NOT a true classic flavor.Recipe for 20 oz. preparation.Place in blender and blend ~30 sec.:64 grams Cold Water (~ 1/4 C)129 grams Apple Cider Vinegar (~1/2 C)49 grams Dry Caesar Mix (~1/3 C)88 grams Virgin Olive Oil (~1/2 C)1/2 tsp. Thai Fish SauceAdd and blend 30 sec.:235 grams Virgin Olive Oil (~1 1/4 C)Mix in:1/4 C Finely grated Parmesan (Cow Milk) or Romano (Sheep Milk) CheesePour into 20 oz. container or make twice as much and pour into a large 40 oz. Ranch Dressing container.Note: No option to add a photo to this review - very disappointed! The substituted brand was from 'Foothill Farms' making 1 1/8 gal. and net contents of pouch is 12.5 oz. Just like we used to use at my restaurant. The packaging has changed but it still tastes the same(now Foothill Farms, formally Milani). A little spendy, but it goes a long way. Feel free to play around with it and not just following the directions on the pack. It can add some very nice Caesar dressing flavors to many dishes.
