I'd be very careful using non-OEM control devices on a stove or furnace. I do not recommend it.

Yes it will. It's adjustable up 180deg.

Q: Is it open on rise or close on rise?

NO means "normally open" meaning the circuit is open (off) until it rises to meet the trigger temp, then it closes (turns on.) It opens again at some point below that temp. Good for a blower fan, because it should stay off until it's hot enough. NC is "normally closed" - the opposite. Good for the heating element, so it stays on until it's hot enough.
