my knife has a 15 degree should i use the 14 or 16 adapter

My set has a 15 degree guide as should yours. If for some reason it is missing use the 16 degree. It's so close it will not be a perceptible difference.

How do I find the correct angle for my knife

You need to check the manufacturers web site to find what angle they hone the knife at. Failing that you can always set a new angle of your own. Keep in mind that many Japanese knives are honed at 2 different angles. Most USA knives and European knives use the same angle on both sides.
