What is the weight capacity

The weight capacity is limited to the combined caster strength. Each caster is 75#rated X 5 casters = 375#'s. with out casters the capacity is much higher because of the steel structure.

Is the crank wheel removable so you can bend forward

Yes. The stem of the wheel is 3/4" square tubing that slides into and out of 1" square tubing that is attached to the locking mechanism. Very easy to use.
