Is it true the airpods Max will only work with an authentic Apple cable? Bought a 3rd party cable and can't get it to work on my android phone

Most 3.5mm to lightning only have a digital to analog converter. Airpods Max needs to have an analog to digital converter (the opposite) to convert the sound coming from the 3.5mm end to the lightning/headphone end. Thats why most don’t work, and this one does.

Does this allow use of the microphone at full quality? Would maybe like to use this as a gaming headset in Windows.

Gaming headphones are designed differently than audio headphones. That’s because gaming headphones require physical microphone attachment. Which you can buy separately and make your AirPods Max a gaming headset. There are videos on YouTube discussing this if you’re interested.

Will this work to use mic on headset?

No, it won't work to use a mic on a headset.  Apple devices use a 4 conductor 3.5mm connector to do stereo audio plus a microphone. (Tip is left audio, ring 1 is right audio, ring 2 is ground, the sleeve is the microphone according to Wikipedia.)  This cable has a 3 conductor 3.5mm audio connector (look at the pictures).  When I use the cable to connect my AirPods Max to a 2018 15" MacBook Pro, it detects the stereo headphones (output) only, and does not detect a microphone.  I can still use the built-in microphone on the MacBook Pro, but I'm not using the microphone on the AirPods Max.  When I plug in Bose QuietComfort 25 headphones, which have a 4 conductor 3.5mm connector, the MacBook Pro detects a microphone as well as stereo headphones.
