I don't need bluetooth. Will this card still work if I don't connect the bluetooth cable?

It will work without the bluetooth cable plugged in. In my system the slot the Bluetooth cable plugs in is already occupied so I have to make do without Bluetooth connectivity currently.

Will this achieve full speed using a pciex1, as my other pcie slots are in use thanks

I use it on my PCIE x1 slot and it works perfectly fine and I get full speeds

I bought this but i have a mini pcie, is there an adapter i can buy so i can actually put this in my pc?

There are adapters for mini pcie to pcie express available for around £10-20 but if you are working with small spaces, such as a laptop, this is not going to fit. On a desktop pc with such slots, given that you have the space, it will work.
