Can this work on 240V? as on the back it say 120V, but in the description and in the manual it say 120/110/220/240V?

Back of my unit is labeled "120V". Its possible you can open it up and switch ranges, but its not a full range power supply.

is the square wave duty cycle adjustable? if so what is the range?

Yes, the duty cycle of the square wave (default is 50%) can be adjusted from 25% to 75% (See page 23 of the included user guide).

Does this include hand-electrodes (stainless steel)?

This function generator comes standard with Probe-GTL-101 x 1, and yes, stainless steel.
