Good flavor
I bought the very expensive King Arthur t thinking it would be better. Horrible flavor. I had to throw away my bread and the whole bag of flour. I like t his brand, too, because the bag is really good. Nothing got in or out and it works very good for the couple of days uts frozen to kill any future bugs I know. I know. Don't think about it or you'll starve to deafh

Excellent Quality Flour: 1. Organic 2. Unbleached 3. Unbromated!
This is an EXCELLENT quality, unbleached organic flour that is free of bromate/bromine/bromide. I use it in my bread machine (I do add some vital wheat gluten and a couple of drops of Lugol's 2% iodine to improve the finished texture, but it isn't necessary). Almost all commercial flours have added bromide; THIS DOES NOT and that, in my book, is a HUGE health plus. To be brief, bromide is a halogen that competes with your thyroid's ability to uptake sufficient iodine for your metabolism to work at its peak. Before the 1970's, commercial bread & bakery goods were baked using iodine as a dough conditioner, instead, but, for whatever reason, bromide is now used. Hypothyroidism (or, rather, what I'd call "subclinical hypothyroidism") is rampant in America, and in my opinion, bromate used as a food additive is partially to blame. I'd recommend health-conscious people Google "bromated vegetable oil," "bromide," "bromate," and "iodine" to learn more. This flour is unavailable in my local area & I'm so glad to be able to get it via Amazon's new Prime Pantry grocery delivery service. The price is reasonable and this makes a truly delicious loaf of fresh-baked bread. Highly recommended!

Going through lots of flour.
I do a lot of baking and I really like this flour! I have recently started baking bread with a sourdough starter and have been using a lot of flour to keep the starter going and to try to perfect my bread :)

Red Mill has the best grains, they are not heavy nor contain aluminium! Great for baking, I have made pizza dough (delicious), muffins of all sorts, cupcakes, tortillas! All very delicious!

Perfect Breads
I buy both the Unbleached White and the Whole Wheat Flours in 20lb bundles like this. You can't beat the cost savings in bulk and Bob's Red Mill is a quality that you can count on. When I get my flours, I prep them into quart freezer bags with 1 1/2 cups of each kind. (I find that 3 cups is a lowest common number for bread recipes) I can get 10 loaf bags by opening one of each, so you can approximate 5 loaves per bag. When I determine what kind of breads and quantities of each I'm going to make out of the entire batch, I add dry ingredients to the freezer bags. If you add all the dry ingredients EXCEPT the yeast, you have pre-made bread mixes however you want them. Then I just add labels and stack in my freezer. It makes bread making so much easier and ensures my ingredients stay fresh.
