Q: Anyone know where I can find assembly instructions? Lost mine and could really use another set of instructions!

Q: will it stand without wheels? I just do not need wheels

Yes it will stand without wheels. It actually comes with rubber "adaptors" (sorry, don't know what to call them) that screw into the bottom frame that keep it off the floor and allow you to adjust to balance the desk.

Q: The listed height is 47.5". Is this the maximum vertical height (i.e. with the table top completely flat)?

47.5" is the height with the top lifted up as much as possible. The height with the top parallel to the ground in around 28"

Q: Is the metal piece on the bottom flush with the glass? Or is it at an angle? Would it hold a book if I was doing homework on it?

On the one I have the metal piece hangs off and has a ridge so stuff won't roll off. I tried putting a book on the metal piece and the part of the ridge that comes up higher than the glass is not deep enough ABOVE the glass to keep the book in place. It probably would keep something thin, like art paper from sliding off but you probably would tape something like that in place anyway.
