魚を捌く上で、文化包丁や出刃だけでは満足できなくなり、購入。 「本当に良いもの」を使った事がないので、良し悪しは正直分からないが、普通に使える。 切れ味も悪くないし、同社のシャープナーも適宜使用している。 良いかどうかは判断しかねるが、悪くないのは間違いない。

これ一本でなんでも捌きます。キスからブリ、アンコウ、すっぽんまで何でも。刃は関節に入れれば刃こぼれなんてまずしませんので、自分にとってでかい出刃は不要ですね。小さいので小回りが効くから、とても捌きやすいです。ステンレスなので錆びにくいし、砥石で研げば自分好みの切れ味に調整できます。買って良かったです。

研ぐのが前提の包丁だ。 だから3つ星。 研ぎが済んだら5つ星。 買ったまま使うと、全く切れない。イカソーメンが繋がる。 二段刃になっているので、ダイヤモンド砥石で2時間程ひたすら研いでようやく使えた。 まともな和包丁の切れ味を求めるなら修行だと思って2時間以上研ぎ続けるか、購入時にプロの研ぎ師に二段刃を修正してもらうべし。

Couteau de forme traditionnelle deba. L aiguisage est à revoir entièrement ( + polissage) la mitre est en plastique en plus , ce qui casse un peux l elegance. Bon , je recherchais un couteau puissant et celui est conforme a mes attentes et l acier est de bonne qualité.

Un cuchillo gama media baja que puedes usar en el proceso de aprendizaje y trabajos básicos9 para cortes de pescado. La calidad excede del precio ya que su hoja es de un acero duro y la manga ergonómico, pero el peso de la manga hace que el cuchillo sea más difícil de manejar. Se recomienda que tengas experiencia con yanagibas para usarlo.

This is my first sashimi-type knife purchase for use in a professional kitchen. I wanted a solid knife and I think I got one for the price. Simple yet sturdy construction and dangerously razor-sharp right out of the box. Was able to cut through fish like butter. Even through tough, sinewy bits. Was able to slide right through seared cuts of tuna for clean and unblemished slices. Would probably recommend it as a good starter knife if you are not looking to pay too much. Again, likely not the best knife out there...but FOR THE PRICE I believe it is well worth it.

It has some heft, which I like and want in this type of knife. I bought it primarily to butcher whole chickens, and it does not disappoint. With its sharpness from the box, the knife effortlessly goes through chicken joints and cartilage. It is a great value, priced under fifty dollars, and I highly recommend it. If you purchase it, please be careful. The knife is extremely sharp.
