I see no reason why you couldn’t. There are lips on the front of the shelving as well

How much weight could this hold? Several stacked books? Also, would this be able to be installed using adhesive mounts?

Everything depends on how you hang them. If they're in a stud, you could put lots of weight. With a wall anchor, not as much. Self adhesive strips might hold spices but not much more
