Yes you do or it will melt if the hob is warm

Can you leave it on all the time and cook on top of it or do you need to remove it to cook?

Needs to be removed to allow cooking. It is merely a protective sheet above the Hob

Would this fit neff 800ml induction hob

Yes it does. But to make sure check the size of your job against the size of your cover. Really happy with the one I bought.

Can you put hot saucepans on this

Yes you can. The glass itself is heat resistant however do not put directly into hot hob.
