In addition, there are 130 detailed recipes. There is a nicely presented section about fish spreads, mousses and dips and making the best known sauces that go well with fish. The chapter about making brines is simply outstanding. This book is a must for anyone interested in smoking or preserving their own fish.

Great book despite the black and white photography.
Excellent book for someone with no knowledge of the craft. Highly recommended. My only wish is that the pictures inside were in color.
