great silicone mat
I love this brand of silicone mats that are made in France because these are very versatile and are of great quality. The measurements are very important. This mat is very big and takes up my entire oven space. This mat is also very handy to use for bread making because I can use this as my working surface and nothing sticks to it. Well, sometimes, a little bit of higher hydration dough like ciabatta may stick a little but it is not difficult to remove. Easy to roll that dough around though. Barely needs any flour dusting and even if it does, a lesser amount than my previous surfaces I used. Easy to roll out pie crusts, tart crusts, cookie dough, bread dough, or even to use as just a 'catch-all' kind of surface while working in the kitchen.

Amazing for pie crust!
I have never had such a fast and easy time making pie crust, and perfect every single time. I have a granite counter but the pastry would stick even though floured enough. I would use my bench scraper to get under the pastry to be able to transfer it to the pie plate. I purchased three items I felt would streamline my efforts and give me a perfect pie crust… the Silpat, a stainless steel adjustable rolling pin with silicone rings to adjust the exact thickness I wanted my crust to be, and a stainless steel powdered shaker sifter duster which I put my flour into. My pastry no longer sticks causing holes to be patched because nothing sticks to the Silpat. The stainless steel rolling pin rolls to the EXACT thickness, and the sifter uses the finest amount of flour eliminating over-flouring the pastry. I could not be happier with this purchase and would highly recommend the Silpat and also the other two products to save time and frustration and to turn out a product you will be proud to serve!

Does help me cut down flour waste
Maybe it’s psychological but I seem to use less flour on this than the pastry marble I had been using. Fairly easy to rinse off right after use. My kitchen sink is medium sized so a larger sink would make it even quicker. Rolls up easy and a couple light elastic bands keep it that way. It fits on our standard 24” deep counter with gallon glass flour containers along the wall. Have used it 15-20 times at least, no issues.

A game changer for rolling dough
I’ve used silpat to line cookie trays for quite a while, and it’s useful - bit I think parchment works slightly better. However rolling dough on a Silpat sheet with a piece of parchment on top is a game changer. The dough slid between the two layers with ease, and I didn’t have to keep adding flour. This meant that the cookies made from re-rolled scraps were as light and tender as those from the first rolling. I can’t wait to try the technique on pie dough

The standard for a reason
Works perfectly. Took a while to figure out how to wash them (HOT, soapy water), but they are fantastic and durable. Highly recommended
