Yacon Live Plant Root/Crown - Three (3) - Peruvian Ground Apple, Bolivian Sunroot (Smallanthus sonchifolius)

First I just let them stay in peat moss until the first one sprouted and I moved them to pots under a grow light. Now, now it's almost the end of winter and all three are sprouting!

The roots are very tiny, smaller than my finger.
