Q: Is it possible to log historical data from this sensor?

Only if you use it with Home Assistant or some other Home Automation Software.

Q: Can I put this inside a refirgerator? of course asuming I still have a wireless connection.

I put one inside the freezer part of my refrigerator for awhile. I was surprised that it was still able to communicate with the gateway, but it did, with occasional short outages. I didn't have it in there very long, so I don't know if longterm exposure to the frost and moisture would ultimately affect the sensor. It might.

Q: The moisture sensor sends "push notifications" to its log, but apparently won't send something like a text or e-mail notification. Is this correct?

I don't see a way to do that at least not from aqara

Q: Where is the Historical Tracking data stored? Is there a monthly fee for this service?

These need to be attached to a Hub or Gateway. That is where the data storage and access happens. There are a variety of options. Home Assistant running on a laptop or something like a raspberry pi is a popular example. There are also dedicated, ready-to-use hub products. Also note that the "tracking data" is only stored for as long as the hub/gateway is configured to do so. They vary.
